<p>I&#8217;ve always loved the sweetness of butternut squash, but never quite found the right recipe to make it frequently.  Recently I picked up the <em>Spiced</em> book by America&#8217;s Test Kitchen from the library and when Deniz and I realized we had a leftover squash from Halloween (dressed up as Count Squashula) and all the ingredients for the squash recipe in the book, we decided to try it one as a fun late evening activity.  Boy was I surprised about the result!  The dish was perfectly balanced.  The roasting produced a sweet slightly crispy caramel cubes with a soft spicy interior.  The sweetness perfectly counterbalanced the slight tanginess.  I&#8217;d make this again and again.</p>

<p>We were trying to decide what to cook one day so we came up with this idea of finding a recipe from a country that hasn&#8217;t influenced us with its cuisine. We came across this Polish stuffed cabbage recipe by Chef Billy Parisi, which looked interesting. We were skeptical a bit as we had stuffed cabbage from Turkey before and there was a chance of this dish being too similar. Oh boy were we wrong. We are glad we made it in a batch that&#8217;s enough for the whole week because we enjoyed eating this every single day for dinner for the whole week.</p>

Put the entire cabbage covered in a large pot of boiling salty water, and cook for 3 to 4 minutes per side.</span></div></li><li id="wprm-recipe-3415-step-1-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px"><span style="display: block;">Let the cabbage sit for 5-6 minutes, until cool enough to touch.</span></div></li><li id="wprm-recipe-3415-step-1-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px"><span style="display: block;">Carefully remove the leaves without tearing them. You should get 16-18 leaves. Carefully flatten each leaf, and trim the thick vein so it can roll up.</span></div></li></ul></div><div class="wprm-recipe-instruction-group"><h4 class="wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold">Filling the Leaves</h4><ul class="wprm-recipe-instructions"><li id="wprm-recipe-3415-step-2-0" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px"><span style="display: block;">Take about 2 to 4 ounces of filling, place it in the lower 3rd section of the leaf, fold in the sides then roll it up. Bring the mixture to boil over high heat. <p>One of the great things about living in Fairfax County are the free community events that they hold for the public.   A couple of weeks ago, the county held a Healthy Together Fairfax event to encourage us local community members to improve our health through fitness, healthy eating, medical education, and pollution prevention.  In addition to enjoying the fun free zumba and self defense classes, we learned a lot through the various vendors and public service tables they set up.  One of the booths gave away this bibim guksu recipe, that we&#8217;ve enjoyed and modified to meet our taste preferences.  </p>

Rise well and let cool. Without delay, crack and peel the eggs. Doing this quickly is important, as the egg shells will be easier to remove if they are peeled soon after cooling. When the bottom browns, turn the sausages over, and continue cooking until 4 sides are browned. Occasionally stir for even cooking and to prevent burning. <p>Deniz has always had an affinity for south east Asian peanut sauces, but has always been disappointed by the Massaman curries he&#8217;s ordered in Thai restaurants.  They&#8217;ve typically been cloyingly sweet, not something he appreciates in main dishes.  His disappointment became so frequent, that I eventually started encouraging him to order other curries so he could enjoy his meal.  However, when we began making lesser known international dishes, we ran across an Indonesian Gado Gado recipe on recipetineats.com that looked promising.  The peanut sauce was a delicious balance of peanutty goodness with a hint of sugar, spice, and heat.  Below is our modification of the recipe to meet our particular tastes.</p>

<li> Mix all <em><strong>Gado Gado Sauce</strong></em> ingredients in a medium sauce pan over low heat.  Simmer for 5 minutes, stirring so that it doesn&#8217;t burn.  </li>
<li>Hardboil and peel the eggs.  Put them in a pot, cover with cold water and bring to a boil.  Remove from heat and let sit for 15 minutes.  Drain, fill the pot with cold water and peel the shells immediately.  </li>
<li>Prepare the <em><strong>Warm Salad Ingredients</strong></em> and <em><strong>Cold Salad Ingredients</strong></em> per instructions in the ingredients list.</li>
<li>Fry all of the <em><strong>Warm Salad Ingredients</strong></em> together in a medium covered sauce pan with a few tablespoons of water until spinach is wilted and the rest of the ingredients are thoroughly warmed.</li>
<li>Place the <strong><em>Cold Salad Ingredients</em></strong> onto the serving plate.  Place the <em><strong>Warm Salad Ingredients</strong></em><em> </em>on top.  Pour the cooked Gado Gado sauce on top.  </li>

<p>I love carrot cake.  After being diagnosed with diabetes, it became a mission of mine to find a healthy recipe that also tastes great.   This recipe uses whole wheat flour, applesauce to reduce oil, (reduced) honey instead of sugar, and sugar free white chocolate chips.  It&#8217;s the perfect balance of fluffy muffin texture, fall spice, crunchy nuttiness, with the right amount of sweetness.  And I found that cake pop sized balls of carrot cake are perfect to get maximum enjoyment without overindulging.   Deniz and Kelin love the recipe and the muffin balls disappear quickly in our house.  Despite the reduced sugar, we all find it perfect for dessert.  </p>



<p><strong>Ingredients:</strong></p>



<p><strong>Dry Ingredients:</strong></p>



<ul><li>1 1/2 c whole wheat flour</li><li>&nbsp;1 t baking soda</li><li>&nbsp;1 t ground cinnamon</li><li>&nbsp;1/4 t ground nutmeg</li><li>&nbsp;1/4 t ground ginger</li><li>&nbsp;1/2 t salt</li></ul>



<p><strong>Wet Ingredients:</strong></p>



<ul><li>&nbsp;2 T butter, melted, or olive oil</li><li>&nbsp;1/3 c honey or sugar</li><li>&nbsp;1 egg, lightly beaten</li><li>&nbsp;1 t pure vanilla extract</li><li>&nbsp;1 c unsweetened applesauce, if using sugar instead of honey, add 3 T applesauce</li></ul>



<p><strong>Add-ins:</strong></p>



<ul><li>1 c shredded carrots (about 2-3 medium carrots).  You can also use shredded zucchini for a less sweet zucchini muffin alternative.</li><li>1/4&nbsp;c&nbsp;no-sugar white chocolate chips (we like Lily&#8217;s White Chocolate Style Baking Chips that are Stevia sweetened)</li><li>3 T coconut flakes</li><li>1/2 c chopped walnuts, toasted</li></ul>



<p><strong>Instructions:</strong></p>



<ul><li>Preheat the oven to 350 degrees F. </li><li>Put the walnuts in a quart-sized ziplock bag and break into 1/5th sized chunks with a rolling pin.  Place the crushed walnuts on a cookie tray lined with parchment paper.  While the oven is preheating, toast the walnuts, approximately 5 minutes.  Watch carefully to ensure the walnuts do not burn.</li><li>Spray cake pop tray cups with cooking spray and brush so that the entire indentation has oil.</li><li>In a large bowl whisk together the <strong>Dry Ingredients</strong>.</li><li>Beat the egg lightly in a small bowl.</li><li>Make a small well in the center of the <strong>Dry Ingredients</strong> and add the <strong>Wet Ingredients</strong>.</li><li>Stir ingredients together until just combined and there are still some spots of flour remaining.</li><li>Fold in the <strong>Add-Ins </strong>just until combined (don&#8217;t overmix or the balls will be dense).</li><li>Distribute the batter evenly among the cake pop tray. I use a melon baller to scoop even amounts of batter and to reduce mess.  Bake for 17 minutes until a toothpick inserted in the center of a cake pop comes out clean.</li><li>Remove to a wire rack to cool completely. These cake pops can be frozen.  They can also keep  covered at room temperature for 2-3 days.</li></ul>

<p>Vietnamese Vermicelli Salad is Kelin&#8217;s new favorite dish, and one of my top 10, so of course we had to learn how to make it.&nbsp; After a lot of trial and error, we finally perfected a vegetarian version that Kelin gave the thumbs up as restaurant-quality.&nbsp; Pho Ca Dao is by far our favorite restaurant for this dish, so we used it as the model to create this recipe.&nbsp; &nbsp;To save on time, we don&#8217;t make everything from scratch, but rather buy pre-prepared items at the Asian Grocery store where we can, like pre-prepared spring rolls, deep fried tofu, pickles, and sauces.&nbsp; Sorry if you&#8217;re looking for full instructions, we don&#8217;t have those.</p>
<p>The noodles do take a long time to prepare because they have to air-dry after they&#8217;re cooked, so I&#8217;d recommend preparing the noodles in advance so that they&#8217;re ready to go when you&#8217;re preparing the meal.&nbsp; The noodles have to air-dry so they don&#8217;t have a chewy texture.</p>

<div class="wprm-recipe-instructions-container wprm-recipe-2679-instructions-container wprm-block-text-normal" data-recipe="2679"><h3 class="wprm-recipe-header wprm-recipe-instructions-header wprm-block-text-bold wprm-align-left wprm-header-decoration-none" style="">Instructions</h3><div class="wprm-recipe-instruction-group"><ul class="wprm-recipe-instructions"><li id="wprm-recipe-2679-step-0-0" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px">Soak the Vermicelli noodles for 15 minutes in very hot water.  Drain and rinse until water runs clear, to remove as much starch as possible.   While the Vermicelli noodles are soaking, boil the water in a large pot (at least 3 qt) on medium-high heat.</div></li><li id="wprm-recipe-2679-step-0-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px"><span style="display: block;">Put the drained, soaked Vermicelli noodles into the pot of boiling water.  Bring back to a boil.  Boil the noodles for 3 minutes.  Drain the noodles, and rinse very well to remove starch so that noodles are not sticky.  We use a salad spinner, filling it with water, draining the noodles, and spinning it 3 times to get all the starch and water out.   Pat the noodles dry and leave to air-dry for at least 30 minutes.</span></div></li><li id="wprm-recipe-2679-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px">Prepare the vegetarian spring rolls per package directions.  Or if you&#8217;d like to do them like we do, air-fry them for 15 min on 400°F, flipping over half way.</div></li><li id="wprm-recipe-2679-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px">Add the stir-fry seasoning and cooking oil to the tofu and mix to coat evenly.  Grill the deep-fried tofu on a grill or pan at high heat until black marks appear, approximately 5 minutes.</div></li><li id="wprm-recipe-2679-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px">Prepare the rest of the ingredients as described in the ingredients list.</div></li><li id="wprm-recipe-2679-step-0-5" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px"><span style="display: block;">Combine the <strong>Sauce </strong>ingredients in a bowl.  Separate into three small serving bowls.</span></div></li><li id="wprm-recipe-2679-step-0-6" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px"><span style="display: block;">Place the ingredients in 3 extra large serving bowls in the following order: chopped lettuce, bean sprouts, chopped mint, chopped basil, cooked and dried vermicelli noodles, chopped peanuts, deep fried grilled tofu, and spring rolls.  Serve with <strong>Sauce</strong>.</span></div></li></ul></div></div>

Place zucchini halves cutside up on the pan. Add 2 T of water, and cover.  Cook for 3-5 minutes. Remove from pan, and cool.  Scoop out the middle of the zucchinis, and set them aside.</div></li><li id="wprm-recipe-2661-step-0-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px">Reheat the saute pan with 1 T of olive oil on medium high heat.  Add tomatoes and stirfry for 2-3 minutes until they are smashed completely. Add the scooped out zucchini insides. Lightly salt.  Remove from pan and set aside.</div></li><li id="wprm-recipe-2661-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px">Reheat the saute pan with 1 T of olive oil on medium high heat.  Add chopped onions, peppers, with 2 T of the sauteed tomato (or 1 T of tomato paste).</div></li><li id="wprm-recipe-2661-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px">Add ground soy meat into onion pepper mix and cook for an additional 1 minute. Add black pepper, paprika, and salt to taste.</div></li><li id="wprm-recipe-2661-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px">Stuff the mixture into the zucchinis. <p>Bibimbap is one of those dishes I love, but don&#8217;t make often because it&#8217;s so time consuming to make.&nbsp; There are so many individual components to the dish that make it so delicious, but each one needs to be prepared and cooked individually, which takes time.&nbsp; It&#8217;s kind of funny that the dish originates as a way to easily use leftovers, because I slave away each time I prepare it.&nbsp; Anyway, to reduce the struggle, I find it&#8217;s best to prep the sauce and vegetables earlier in the day, and then cook everything when it&#8217;s time for the meal.</p>
<p>The sauce is the key to making the dish right is the sauce.&nbsp; I got the below sauce recipe from <a href="https://mykoreankitchen.com/bibimbap-korean-mixed-rice-with-meat-and-assorted-vegetables/">My Korean Kitchen</a>, and modified it slightly to taste.&nbsp; The below recipe makes more sauce than needed for the dish.&nbsp; For all the effort, I like having extra sauce to use later.</p>
<p>This recipe also adds Vietnamese pickled daikon and carrots instead of kimchee.&nbsp; I find that the sweet and sour pickley taste goes so well with the sauce.&nbsp; Kimchee has always been a little to strong for my taste and the sweetness of the pickled daikon and carrots marries well with other vegetables in the dish.&nbsp;&nbsp;I got the recipe from <a href="https://www.simplyrecipes.com/recipes/vietnamese_daikon_and_carrot_pickles/">Elsie Bauer on Simply Recipe</a>s, and modified it to taste.&nbsp; The below recipe makes more pickled daikon and carrots than is needed for the dish.&nbsp; Like the sauce, for all the effort, I like having extra for later.</p>

Stir the sugar and water until the sugar is fully dissolved before placing the rest of the ingredients.  Place the jar in the refrigerator.</div></li><li id="wprm-recipe-2668-step-0-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px">Prepare all the ingredients as described in the ingredients list.</div></li><li id="wprm-recipe-2668-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px">Mix the Sauce ingredients in a squeeze bottle in the order listed. Add the cooked rice and press down to maximize surface contact with the pan.  Cook for 3 minutes or until the rice is slightly browned.</div></li><li id="wprm-recipe-2668-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px">Reheat the saute pan on medium high heat with 1 t of cooking oil.  Add the jullianed carrots and stir to coat with oil.  Cover the pan and cook for 3 minutes, stirring once to evenly brown.  Sprinkle with salt and add 1/4 t of sesame oil.  Stir to combine.  Remove from pan and place in serving bowls.</div></li><li id="wprm-recipe-2668-step-0-5" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px">Reheat the saute pan on medium high heat with 1 t of cooking oil.  Add the bean sprouts and cook for 1 minute, stirring constantly.  Sprinkle with salt and 1/4 t sesame oil, and stir to combine.  Remove from pan and place in serving bowls.</div></li><li id="wprm-recipe-2668-step-0-6" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px">Reheat the saute pan on medium high heat with 1 t of cooking oil.  Add the sliced mushrooms and cook for 2 minutes, stirring constantly.  Sprinkle with salt and stir to combine.  Remove from pan and place in serving bowls.</div></li><li id="wprm-recipe-2668-step-0-7" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px">Reheat the saute pan on medium high heat with 1 t of cooking oil.  Add the spinach and cook for 1 minute, flipping constantly to ensure leaves are touching the pan and cooking the same.  Sprinkle with salt and stir to combine.  Remove from pan and place in serving bowls.</div></li><li id="wprm-recipe-2668-step-0-8" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px">Add 1 to 2 T of drained pickled Daikon and Carrots to the serving bowls.</div></li><li id="wprm-recipe-2668-step-0-9" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px">Add 1 to 2 T of julienned cucumbers to the serving bowls.</div></li><li id="wprm-recipe-2668-step-0-10" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px">Reheat the saute pan on medium high heat with 1 t of cooking oil.  Crack the 3 eggs into the pan, taking care to keep them separate.  Cook for 1 minute and then flip over.  Continue cooking for as long as needed to cook the yolks to desired consistency.  The traditional dish calls for runny yolks, but I don’t like runny yolks, so I try to puncture the yolk and then fully cook them.  Sprinkle with salt and pepper and stir to combine.  Remove from pan and place in serving bowls on top of vegetables.</div></li><li id="wprm-recipe-2668-step-0-11" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px">Squeeze the Sauce into the bowl in a swirly pattern.  Serve and enjoy.</div></li></ul></div></div>

										<content:encoded><![CDATA[<p>Living in Washington DC, we&#8217;re blessed with a plethora of Ethiopian grocery stores that we are happy to take full advantage of. &nbsp;=) &nbsp;There&#8217;s something so satisfying about being able to buy a fresh injera rather than having to make it yourself. &nbsp;We always buy a pack when we cook Ethiopian, but then end up with extra that we don&#8217;t want to waste. &nbsp;We&#8217;ve found that Timatim Fit Fit is a great use of excess injera. &nbsp;It&#8217;s like a healthy salad with a well-balanced spicy tangy dressing and welcome heartiness from the injera. &nbsp;We&#8217;ve adapted the following recipe from <em>Cooking with Imaye</em> to meet our tastes:</p>

<p>I&#8217;ve never been a big fan of quiche because of the eggy and heavy taste.  But after having brunch at a French eatery, I realized that quiches don&#8217;t have to be eggy or fatty.  So Deniz and I created this delicious and easy to make quiche that is lower in fat than normal quiches and not so eggy in taste.  It was so tasty, we documented the recipe and have made it many times since.</p>
<p>Makes 2 quiches.</p>

Also place the veggie sausage patties into the oven at the same time on tin foil and bake for 13 minutes.</div></li><li id="wprm-recipe-3203-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px">Take crust and veggie patties out of oven and reduce the heat to 350°F.</div></li><li id="wprm-recipe-3203-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px">Heat cooking oil on medium high heat in large saucepan.  Add diced veggies in the following order:  carrots, onions, pepper, broccoli.  Allow to cook for 2 minutes.  Add water.  Cover and cook on high until steam comes out of the slides of the pan/lid, approximately 7 minutes.  Turn the heat off and let stand for 10 minutes with the cover still on.  Drain any remaining water.   Add 1/2 t salt and mix to combine.  Remove to a large mixing bowl and allow to cool.</div></li><li id="wprm-recipe-3203-step-0-5" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px">Crumble the extra firm tofu using a fork until it is the consistency of scrambled eggs.  Add to the bowl of veggies and mix to combine.</div></li><li id="wprm-recipe-3203-step-0-6" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px">Break the sausage patties into pieces using a fork until they are a small ground beef consistency.  Add 1/2 t salt and mix to combine.  Add to the bowl of veggies/tofu and mix to combine.</div></li><li id="wprm-recipe-3203-step-0-7" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px">Add the pepper, beaten eggs, and 1/4 of the feta cheese to the bowl of veggies and sausage patties.  Mix the bowl ingredients to combine.</div></li><li id="wprm-recipe-3203-step-0-8" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px">Scoop the veggie-sausage-egg mixture into the baked pie crust. Add the remaining crumbled feta cheese to the top.  Place into the oven and bake for about 45 minutes, or until the top is golden brown and quiche is set.</div></li></ul></div></div>
