Veggie Injera Mix:
2medium tomatoeschopped
1/8red onionvery thinly sliced
1/2carliston pepperdiced
1clovegarlicsmashed and minced
1fresh injeratorn into small pieces
1clettucechopped into 1 inch pieces (optional)
