We were trying to decide what to cook one day so we came up with this idea of finding a recipe from a country that hasn’t influenced us with its cuisine. We came across this Polish stuffed cabbage recipe by Chef Billy Parisi, which looked interesting. We were skeptical a bit as we had stuffed cabbage from Turkey before and there was a chance of this dish being too similar. Oh boy were we wrong. We are glad we made it in a batch that’s enough for the whole week because we enjoyed eating this every single day for dinner for the whole week.

One of the great things about living in Fairfax County are the free community events that they hold for the public. A couple of weeks ago, the county held a Healthy Together Fairfax event to encourage us local community members to improve our health through fitness, healthy eating, medical education, and pollution prevention. In addition to enjoying the fun free zumba and self defense classes, we learned a lot through the various vendors and public service tables they set up. One of the booths gave away this bibim guksu recipe, that we’ve enjoyed and modified to meet our taste preferences.

Growing up vegetarian in an age where vegetarian was not particularly common, I ate an awful lot of vegetarian chili during potlucks. They were always quite sour for my taste, so I thought that chili was just something that I would never like. When I got much older, I tried on a whim a chili recipe from The New Laurel’s Kitchen by Laurel Robertson, Carol Flinders, and Brian Ruppenthal, and was floored by how great it tasted. Wonderful depth of flavor without the offputting tartness of canned tomatoes. Below is a modification to that base recipe that I’ve made to add veggie faux meat and even more depth of flavor.

I grew up on this dish as a little girl. One of the “aunties” would bring it to every Taiwanese community potluck. It was a staple that I always looked forward to. It has that every so slightly chewy clear noodle texture and that balanced salty soy umami taste. Deniz and I have made it a number of times, different ways, and below is our favorite recipe.

Bibimbap is one of those dishes I love, but don’t make often because it’s so time consuming to make. There are so many individual components to the dish that make it so delicious, but each one needs to be prepared and cooked individually, which takes time. It’s kind of funny that the dish originates as a way to easily use leftovers, because I slave away each time I prepare it. Anyway, to reduce the struggle, I find it’s best to prep the sauce and vegetables earlier in the day, and then cook everything when it’s time for the meal.

The sauce is the key to making the dish right is the sauce. I got the below sauce recipe from My Korean Kitchen, and modified it slightly to taste. The below recipe makes more sauce than needed for the dish. For all the effort, I like having extra sauce to use later.

This recipe also adds Vietnamese pickled daikon and carrots instead of kimchee. I find that the sweet and sour pickley taste goes so well with the sauce. Kimchee has always been a little to strong for my taste and the sweetness of the pickled daikon and carrots marries well with other vegetables in the dish. I got the recipe from Elsie Bauer on Simply Recipes, and modified it to taste. The below recipe makes more pickled daikon and carrots than is needed for the dish. Like the sauce, for all the effort, I like having extra for later.

Before I became vegetarian one of my favorite kebabs was Adana kebab. It got its name from the city of Adana in Turkey, and with its simple yet hard to achieve preparation what made this dish so tasty. Naturally we won’t be using tail fat, or mince the meat with a cleaver but we achieved a result that will satisfy any meat-eater or vegetarian out there. While some may disagree, It is important that it is served with bulgur pilaf and slices of onion rings sprinkled with sumac.

It’s moist and meaty, with a slight hint of sweetness and vegetables.

Over the past week, I’ve been craving savory succulent meaty Asian meat dishes and was motivated to learn to make tasty bulgogi beef. After a few test trials, and some help from the internet, I was able to create super succulent, crispy yet soft, and incredibly delicious vegetarian bulgogi beef. I started from the Bulgogi Beef recipe on the Damn Delicious website and modified it to meet our vegetarian diet. The sauce by itself was finger licking good. Warning, this recipe is very time-consuming to make, but oh the resutls are amazing, you won’t believe that you’re not eating meat. After we made it once, we made it a second time the very next day, quadrupling the batch.

Deniz made a cool video showing the cooking process. It’s available below, or at Youtube at this link.

One day, Deniz and I had some extra broccoli and decided to make the classic Chinese-American beef with broccoli dish. We vegetarian-ized a recipe from Wei-Chuan’s Chinese Cooking cookbook and were happy with the results. We’ve continued to modify it to further enhance it. Here’s our latest and favorite version.

We decided to take a long overdue trip to Chinatown last weekend. It was great to find some hard to find items, including pickled mustard green. Here’s an incredibly addictive Sichuan recipe from Wei-Chuan’s Chinese Cooking cookbook, modified to be vegetarian. The ginger and pickled mustard green are the stars in this recipe, and pair perfectly with the fake meat and vegetables.

This Russian dish is classic in America, commonly found in TV dinners, but is never available in a vegetarian version. We’ve updated it for our vegetarian diet, and have replaced the traditional sour cream with yogurt for a healthier dish. Enjoy!

This dish has rich five-spice savory flavors, creamy thin bean-curd noodles, with crispy water chestnuts for texture. It’s low carb and packed full of protein. We adapted from Wei-Chuan’s Singaporean, Malaysian & Indonesian Cuisine cookbook for our vegetarian diet and available ingredients. The original recipe called for rolling the meat in the sheets to make rolls, but after tearing multiple sheets, we went the lazy route and did a stir-fry. The taste was just as great, and much faster to make.

Ingredients:

6 dried bean curd sheets

¼ c + 1 T vegetable cooking oil

1 bunch green onions, chopped (optional)

Meat mixture:

12 Morningstar Original Sausage Patties

1 c vegetarian shrimp or prepared boiled wheat gluten logs, diced (optional)

1 c water chestnuts, diced

2 eggs, beaten

1 t salt

2 t soy sauce

2 t five-spice powder

2 t sugar

2 T sesame oil

Instructions:

Toast the vegetarian sausage patties for 12 minutes at 400ºF. Pulse in a food processor to a ground beef consistency.

Soak the bean curd sheets in boiled water until soft, about 20 minutes. Drain, squeze the excess water out, and break into pieces.

Prepare the Meat Mixture ingredients as described above. Combine the ground vegbeef and the remaining Meat Mixture ingredients in a large bowl. Stir to combine well.

Heat the ¼ c cooking oil in a large non-stick pan on medium high heat. Add the broken bean curd sheets and stir-fry to keep the sheets from sticking to the pan, about 5 minutes. Add the Meat Mixture. Continue stir-frying for another 3 minutes.

Remove from heat. Add the 1 T of cooking oil and green onions. Stir to combine well.

In our recent trip to Turkey we bought several different spice mixes one of which happened to be a helper for one of my favorite meatball dishes: Inegol Kofte. The original plan was to make the meatballs using this mix and the soy meat, but then we saw something more mouthwatering on the package, which brings us to this recipe. Please note that it might be hard to find this mix since Knorr only makes this in Turkey. There are other brands that can be purchased online, but we can never be sure if the results are going to to the same. We apologize for any inconvenience in advance.

Ingredients:

Meatballs:

1 lbs of Morningstar original vegetarian sausage patties

½ pack of Knorr Inegol Meatball Mix (if not available, you can try Basak brand which seems to be more accessible in some regions)

½ c of boiling water

½ Knorr vegetable bouillon cube

1 egg

4 T butter

cooking oil

Veggie Roast:

4 T butter

6 cloves of garlic

2 medium onion, chopped in cubes

4 medium carrots, peeled and chopped in cubes

2 small potato, peeled and chopped in cubes

4 medium tomatoes, sliced in thin circles

1 can of tomato paste (6 oz)

Garnish:

1 cup of shredded Kasseri cheese or similar (e.g. provolone)

Instructions:

Toast the sausage patties for 14 minutes at 400°F. Pulse the toasted patties a food processor (or chop manually) to a ground beef consistency.

Melt the 4 T of butter (in a small bowl about 30 seconds on high in the microwave) and set aside to cool to room temperature.

Scramble the egg in a small bowl and set aside.

In a large bowl, mix the boiled water with the bouillon cube and stir until it is dissolved. Add the meatball mix continue stirring until well combined. Add the toasted ground veggie patties, scrambled egg, and cooled melted butter. Stir / kneed for about 5 minutes until it is mixed well. Make it long, round meatballs in shape of very short (2″ long) hot dogs, but little bit flatter. While making the meatballs, try not to squish them too much. You want the meatballs to stay as fluffy as possible. Put the raw meatballs on a greased cookie sheet in the fridge for at least half an hour.

Heat 4 T of butter in the empty large skillet. Add the onions, carrots, potatoes, garlic, tomato paste (in this order). Stir-fry until soft. Add salt and pepper to taste. Set the vegetables aside.

Heat oven to 350°F.

Heat 2 T of vegetable oil on high heat in a large skillet. Add the meatballs and sear them for one minute each side. The meatballs should be browned on each side but not burnt. You may have to do a few batches depending on how large your pan is. Set the meatballs aside.

Grease the bottom of a deep baking dish. Lay the tomato slices to cover the bottom. Spread half of the cooked vegetables on top, then add the meatballs side by side, and then add the rest of the vegetables on top. Bake it covered for 40 minutes in center rack. Take it out, sprinkle the shredded cheese on top. Broil it until the cheese on top is melted and slightly brown (about 5 minutes).
