<p>After I became vegetarian, the world of shrimp and lobster dishes were lost to me.  This was particularly sad for me, since many of the most delicious Chinese dishes are prominently feature seafood.  So when I ran across a fake whole lobster at Good Fortune, I determined to buy it and make one of one of the Wei Chuan seafood recipes that I had so often flipped past   The ingredients for this particular recipe were an add combination for me, which attracted me to it.  And I wasn&#8217;t disappointed.  The flavors were bold, at once tangy, sweet, savory, and so flavorful.  I felt like I was transported back to my younger meet-eating years dining in a high end Chinese seafood restaurant.  I proudly served it for Thanksgiving dinner where it was gobbled up by everyone.  </p>

<p>After a busy and eventful number of years, life somewhat calmed down in our second home, and Deniz and wanted to get back into testing recipes.  So we decided to test try a new international dish from a different country every week, in search for new and interesting tastes and textures to titillate our taste buds.  This Nigerian Akara is the first we tried.  It&#8217;s simple yet surprisingly unique.  Mild bean taste in a deep fried bread ball texture.  It&#8217;s normally eaten for breakfast, yet, with some spices or sauce, I can see it making a great and fun fusion snack or appetizer.    </p>

<li> In a large bowl, cover the black eyed peas in cold water.  Let sit anywhere between 15 min to an hour to loosen the skins, no longer or the beans will get mushy.</li>
<li>Prepare the rest of the ingredients according to the ingredient list.</li>
<li>Drain, and then transfer to a blender and add approx 8 cups of water.  You may need to do in 2 batches.  Pulse the beans 10 times for 1 second each to loosen the skin off the beans, but not to pulverize the beans.</li>
<li>Pour back into the large bowl, mix.  Let stand for 10 minutes.  Massage the beans to help loosen the skin off the beans, and mix.  Let stand for another 20 minutes to allow the skins to float to the top of the water. </li>
<li>Pour the top of the liquid into a colander to collect only the skins that are floating on the top of the water.  Discard the skins.   Refill with water and repeat until most of the skins are gone.  It is okay if there are still some skins left.</li>
<li>Drain, and transfer the deskinned peas back to the blender.  Add 1 c water, chopped onions, chopped garlic, chopped jalapeno, chopped red pepper, bullion, and salt.  Blend for 3 minutes until the mixture is a paste.  Remove from the blender and fluff up the paste to add air to the mixture.</li>
<li>Prepare a sheet with paper towels.  Heat up a deep fryer full of oil.  </li>
<li>Drop 1 T of the mixture into the deep fryer oil one at a time, dropping far enough apart to make sure the balls do not stick together.  Using a mellon ball scoop can help to get the mixture out of the scoop easily and keep the Akara in a more rounded shape.  Cook until golden brown, flipping over half way, approximately 6 minutes.  Transfer to the baking sheet to drain.  </li>

<p>Air-fried chickpeas are such a great snack!&nbsp; Healthy and super tasty.&nbsp; Crispy on the outside and slightly soft on the inside.&nbsp;</p>
<p>Ever since we discovered we can make them in the air-fryer we&#8217;ve been making them all the time.&nbsp; This recipe is a modification of the recipe on <em><a href="https://sweetpeasandsaffron.com/crispy-air-fryer-chickpeas">Sweet Peas and Saffron</a></em> that my sister Vicky forwarded to me.&nbsp; Enjoy!</p>

Scoop out the middle of the zucchinis, and set them aside.</div></li><li id="wprm-recipe-2661-step-0-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px">Reheat the saute pan with 1 T of olive oil on medium high heat.  Add tomatoes and stirfry for 2-3 minutes until they are smashed completely. Add the scooped out zucchini insides. Lightly salt.  Remove from pan and set aside.</div></li><li id="wprm-recipe-2661-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px">Reheat the saute pan with 1 T of olive oil on medium high heat.  Add chopped onions, peppers, with 2 T of the sauteed tomato (or 1 T of tomato paste).</div></li><li id="wprm-recipe-2661-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px">Add ground soy meat into onion pepper mix and cook for an additional 1 minute. <p>Bibimbap is one of those dishes I love, but don&#8217;t make often because it&#8217;s so time consuming to make.&nbsp; There are so many individual components to the dish that make it so delicious, but each one needs to be prepared and cooked individually, which takes time.&nbsp; It&#8217;s kind of funny that the dish originates as a way to easily use leftovers, because I slave away each time I prepare it.&nbsp; Anyway, to reduce the struggle, I find it&#8217;s best to prep the sauce and vegetables earlier in the day, and then cook everything when it&#8217;s time for the meal.</p>
<p>The sauce is the key to making the dish right is the sauce.&nbsp; I got the below sauce recipe from <a href="https://mykoreankitchen.com/bibimbap-korean-mixed-rice-with-meat-and-assorted-vegetables/">My Korean Kitchen</a>, and modified it slightly to taste.&nbsp; The below recipe makes more sauce than needed for the dish.&nbsp; For all the effort, I like having extra sauce to use later.</p>
<p>This recipe also adds Vietnamese pickled daikon and carrots instead of kimchee.&nbsp; I find that the sweet and sour pickley taste goes so well with the sauce.&nbsp; Kimchee has always been a little to strong for my taste and the sweetness of the pickled daikon and carrots marries well with other vegetables in the dish.&nbsp;&nbsp;I got the recipe from <a href="https://www.simplyrecipes.com/recipes/vietnamese_daikon_and_carrot_pickles/">Elsie Bauer on Simply Recipe</a>s, and modified it to taste.&nbsp; The below recipe makes more pickled daikon and carrots than is needed for the dish.&nbsp; Like the sauce, for all the effort, I like having extra for later.</p>

The traditional dish calls for runny yolks, but I don’t like runny yolks, so I try to puncture the yolk and then fully cook them.  Sprinkle with salt and pepper and stir to combine. It&#8217;s moist and meaty, with a slight hint of sweetness and vegetables.</p>

<p>The first time I went to Turkey, I had these sekerpare cookies and fell in love.&nbsp; They&#8217;re soaked in a delicious syrup, giving them an incredibly moist crumbly texture that I&#8217;ve never had in any other cookie.&nbsp; We often crave them as there&#8217;s nothing comparable available in the US.&nbsp; We&#8217;ve tried making them many times with no success, until we found a recipe on <a href="https://yemek.com/tarif/sekerpare-2/">yemek.com</a>.&nbsp; We reduced the sugar and replaced the vanilla extract with almond extract for an extra delicious flavor.&nbsp; The result was perfect!&nbsp; Finally, we can have the cookies we love at home!</p>

The syrup cannot be hot when it is combined with the cookies.</div></li><li id="wprm-recipe-3151-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px">Combine and mix the Cook Dough ingredients in a large bowl.  Mix the dough until uniform with a fork, and then kneed the mixture until it is like playdough consistency.</div></li><li id="wprm-recipe-3151-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px">Prepare a cookie sheet with parchment paper.  Spray or brush oil on top.  Using your hands, form walnut-sized balls out of the mixed cookie dough.  Put them on the oiled parchment cookie sheet and press them into a flattened ellipsoid shape.</div></li><li id="wprm-recipe-3151-step-0-5" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px">Use a fork to press lines on the top of each cookie.</div></li><li id="wprm-recipe-3151-step-0-6" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px">Mix the egg yolk in a small bowl.  Brush the egg yolk on top of each cookie.</div></li><li id="wprm-recipe-3151-step-0-7" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px">Bake for 25 minutes.</div></li><li id="wprm-recipe-3151-step-0-8" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px">After done baking, while the cookies are still hot, put the cookies in a single layer in a tray that is deeper than the cookies.  Pour the cooled syrup on top of the hot cookies.  Allow the cookies to soak for 15 minutes.  Turn the cookies over and allow them to continue to soak for another 15 minutes.</div></li><li id="wprm-recipe-3151-step-0-9" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px">Enjoy while warm!</div></li></ul></div></div>

<p>Over the past week, I&#8217;ve been craving savory succulent meaty Asian meat dishes and was motivated to learn to make tasty bulgogi beef.&nbsp; After a few test trials, and some help from the internet, I was able to create super succulent, crispy yet soft, and incredibly delicious vegetarian bulgogi beef.&nbsp; I started from the Bulgogi Beef recipe on the <a href="https://damndelicious.net/2019/04/21/korean-beef-bulgogi/">Damn Delicious</a> website and modified it to meet our vegetarian diet.&nbsp; The sauce by itself was finger licking good.&nbsp; Warning, this recipe is very time-consuming to make, but oh the resutls are amazing, you won&#8217;t believe that you&#8217;re not eating meat.&nbsp; After we made it once, we made it a second time the very next day, quadrupling the batch.</p>

<div class="wprm-recipe-instructions-container wprm-recipe-3157-instructions-container wprm-block-text-normal" data-recipe="3157"><h3 class="wprm-recipe-header wprm-recipe-instructions-header wprm-block-text-bold wprm-align-left wprm-header-decoration-none" style="">Instructions</h3><div class="wprm-recipe-instruction-group"><h4 class="wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold">Instructions:</h4><ul class="wprm-recipe-instructions"><li id="wprm-recipe-3157-step-0-0" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px">Prepare the ingredients as described above in the ingredients list.</div></li><li id="wprm-recipe-3157-step-0-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px">Place the dried TVP slices in the Instant Pot.  Cover with enough water to cover the slices.  The slices may float, so push them down with a spatula to wet them.  Cook the TVP slices on high pressure for 1 minute.  After cooking is complete, allow the cooking TVP to stay in the Instant Pot for another 10 minutes to be come really soft.</div></li><li id="wprm-recipe-3157-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px">Mix the Marinade ingredients together in a large bowl.  Mix the Sauce ingredients together in a medium bowl.</div></li><li id="wprm-recipe-3157-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px">Drain the TVP in a colander and rinse with cold water.  Squeeze any additional water out of the slices with your hands to get rid of the gluten-tasting liquid. Continue working to get rid of the gluten taste by soaking the TVP in fresh water and then squeezing the water out 2 or 3 more times.</div></li><li id="wprm-recipe-3157-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px">Place the drained, cooked TVP in the Marinade.  Allow the TVP to sit in the marinade for at least 30 minutes, several hours is desired.  If marinading for several hours, put it in the refrigerator.</div></li><li id="wprm-recipe-3157-step-0-5" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px">Squeeze the marinade out of the TVP slices and place the squeezed TVP slices in a large bowl.  Sprinkle the 2 T of corn starch over the squeezed TVP slices with as even a coat as possible, and mix to get as much of the surface area of each TVP slice coated.</div></li><li id="wprm-recipe-3157-step-0-6" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px">Heat 2 T of cooking oil in a large flatbottomed non-stick pan over high heat.  Place the dusted TVP slices in the hot oil, separate the slices, and spread each slice out so that as much TVP surface area is touching the hot pan as possible.  Leave the TVP in the pan without stirfrying it until it is browned (around 3 minutes).  Flip the TVP over and allow the other side to cook until browned.</div></li><li id="wprm-recipe-3157-step-0-7" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px">Add the chopped green onions to the pan.  Stir for 30 seconds.  Then add the Sauce to the pan.  Stir to evenly coat for 30 seconds.  Add the sesame seeds to the pan and stir to evenly coat.  Serve.</div></li></ul></div></div>

										<content:encoded><![CDATA[<p>I love lo mein and have struggled to find a good recipe for making it for years.&nbsp; During new years, I was searching for long-life noodles and discovered <a href="http://thewoksoflife.com/2017/01/long-life-noodles-yi-mein/">this recipe on Woks of Life</a>.&nbsp; I happened to have fresh noodles and shiitake mushrooms on hand and used that to great results.&nbsp; I also felt the dish needed some broth seasoning, so I added the mushroom seasoning.&nbsp; The result was fantastic! I&#8217;ve made it countless times since.</p>

										<content:encoded><![CDATA[<p>This semolina halva is one of my favorite Turkish desserts. &nbsp;I have always thought of halva as a sticky and thick white block, and was delighted when Deniz introduced me to this very different type of halva. &nbsp;It&#8217;s buttery and slightly sweet, light and fluffy, and eaten with a spoon. &nbsp;Once I put one spoon in my mouth, I can&#8217;t stop eating until the bowl&#8217;s gone. &nbsp;And then I start looking around for more.</p>

Stir the mixture well, and cook on very low heat for 10 more minutes.</div></li><li id="wprm-recipe-3198-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px">Remove the cooked semolina to a large bowl and fluff with a fork.  If desired, mix in flavorings (e.g., small spoon of nutella or a drop of lemon extract or a drop of almond extract, etc).  Dust with powdered sugar before serving.</div></li></ul></div></div>

<p>One day we were searching for a vegetarian recipe as usual, and we came across this leek &amp; carrot recipe in a Turkish cookbook. It looked simple enough, but we weren&#8217;t sure if it was going to taste good. Since we have done this twice, we can say that we have no more doubts. This recipe of veggies and rice in olive oil combines sweetness, saltines, and sourness all together just in few minutes.</p>

Cut them in 1 inch slices.</div></li><li id="wprm-recipe-3209-step-0-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px">Wash in a big bowl while taking the rings out by pushing them with your finger.</div></li><li id="wprm-recipe-3209-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px">Chop the carrots in circles or ellipses about ¼ inch thick.</div></li><li id="wprm-recipe-3209-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px">Dry the leeks, put them in a pan with the olive oil and the carrots.</div></li><li id="wprm-recipe-3209-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px">Cover and cook for about 5 minutes until the leeks are soft, stirring occasionally.</div></li><li id="wprm-recipe-3209-step-0-5" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px">Add the rice, salt, sugar, lemon juice, and the water.
